Preparation
Preheat the oven to 200 degrees (400 F). Place a rack on a cookie sheet covered with aluminum foil. Cover the grate with PAM spray.
In a food processor put the cereal and crackers or toast to grind. Put everything ground in a plastic bag and add oil, salt, cayenne pepper, paprika, and pepper. Stir everything well.
Beat mayonnaise and mustard dijon in a deep bowl.
Pass the chicken pieces through the prepared mayonnaise and cover well. Then put the piece of chicken in the plastic bag and cover well with the cereal. Put on the prepared grid and repeat with the rest of the chicken.
Put PAM spray on top of the chicken and put it in the oven. Cook for 35-40 minutes until cooked.
Pass to a platter and serve hot or room temperature.
