Ingredients

6 portions
  • 1 kilo beef, skirt or flank
  • 85 grams chipotle chili, dry
  • 20 grams ancho chili pepper
  • 1 head garlic
  • aromatic herbs, to taste: cumin, cloves, bay leaf, thyme and oregano
  • oils, the necessary
  • 1 kilo corn tortilla, for taco or normal
  • salt, the needed
  • 1 tablespoon white vinegar
  • black pepper, the needed

Preparation

The chiles are first roasted on a previously heated comal, then deveined and liquefied together with the garlic and the spices and herbs.
Sneak over a deep pot where it will season and add a little vinegar, over high heat, add the meat cut into pieces and previously washed.
Cook in a steamer until it softens the meat. The tortillas are passed over a saucepan with hot oil, and they are quickly removed without letting them brown, to form the taquitos filled with barbecue.
You can chop the meat or shred it, to your liking. They are accompanied with spicy red sauce, lemon juice and chopped onion.

PRESENTATION

And golden or blanditos, you can accompany them with chopped onions, lemon and radishes.

TIPS

The secret to the flavor is a little bit burned a couple of chiles and it will give a very intense flavor to the sauce.

El sabor no está mal, pero no son auténticos tacos de barbacoa. El sabor nada que ver con unos tacos de barbacoa.
