Beef Filet in Puff Pastry

  • 1 kilo puff pastry
  • 1 1/2 beef tenderloins, clean and without the cord
  • black pepper
  • 2 tablespoons butter
  • 3 tablespoons butter
  • 2 shallots, big
  • 1/2 kilos mushroom, clean and finely chopped
  • 1 tablespoon butter
  • 1 can beef broth
  • 1/2 cups thick cream
  • 1 tablespoon mashed tomatoes
  • 1 teaspoon paprika
  • rice paper, to make the rolls
  • egg whites


Preheat the oven to 275 centigrade. Tie the fillet and seal it in the two tablespoons of butter, add salt and pepper, remove it and let it cool.
Heat 3 tablespoons of butter and add the chopped shallots to make them sharp. Then, add the mushrooms, season them and let the liquid evaporate. Pass it to a plate, let it cool and put it in the refrigerator.
Spread the puff pastry and cut it into a rectangle large enough to wrap around the whole filet. Place part of the mushroom mixture and put the steak on top. Put more mushrooms on the fillet and wrap in the puff pastry.
Flatten the tips of the remaining puff pastry with a rolling pin and varnish with egg white (so that they stick). Turn the fillet over so that the smooth part is visible. Garnish with pieces of the remaining puff pastry and paste with egg white.
Make two small holes in the puff pastry to let the steam escape and put a tinfoil funnel in them.
Put on a baking sheet spread with butter and bake for 30 minutes or until golden brown at 275 centigrade.
Meanwhile, prepare the sauce. Put 1 tablespoon of butter where we seal the steak and add 1 chopped shallot to acitrone. Add the tomato puree, the broth, the cream and paprika, and let it reduce. Remove the fat, strain it and keep warm.
Serve the meat with the sauce, chips and minced parsley.


Accompany this dish with a Malbec wine.
