Preparation
The beans are cleaned and washed and soaked overnight before preparing.
The beans are boiled and the first water is poured.
At the same time the meat cut into pieces is boiled and a beef broth is made. The marrow bones are left inside, giving the dish a lot of flavor. You have to boil the meat enough until it is soft.
Once the meat is ready, add the beans, potatoes, onion, garlic cloves, chopped and unpeeled tomatoes, celery, bay leaf, tomato puree and carrot. Season with salt and pepper and with beef or chicken broth and let it boil over medium heat until the beans are soft.
The garlic, onion, potato and carrot are ground in the blender and then incorporated into the stew. Let it boil over a low flame and remove the celery and bay leaf.
It is tested to see if it is good salt and pepper and is ready to serve.
