Ingredients

4 portions
  • 2 beef tongues
  • 4 cloves garlic
  • 3 onions
  • 1 bunch fresh coriander
  • 4 leaves bay (laurel)
  • 10 green tomatillos
  • 2 jalapeno Peppers
  • 500 grams corn tortilla
  • to taste lemon

Preparation

In the pressure cooker place the two tongues of beef, previously washed, along with a peeled onion, cloves of garlic, bay leaves and three tablespoons of salt. Put enough water to cover everything. Boil without covering the pot, when it is boiling cover the pot, place the valve and wait for it to start to sound.
When it starts to sound it waits 30 minutes and the language will be ready. Turn off the fire and wait to open the lid. Gently stick your tongue out on a chopping board, remove the skin and cut it to your liking. Place the meat on wax paper, inside a bowl or container with lid that retains the heat.
For the green sauce In the blender place the green tomatillos, half of an onion, the jalapeños, salt to taste, 1/4 of the cilantro bunch and the juice of a lemon. Blend and serve.
Finely chop a whole onion and half that we do not use in the sauce and the 3/4 parts of the bunch of cilantrillo that we have left.
With the hot tortillas, cook the tacos with the meat, the vegetables and the sauce to taste.
