  • enough salt
  • 1/4 onions
  • 3 cloves garlic
  • 500 grams flank steak
  • 1/4 onions, for the caldillo

  • 4 tomatoes, for the caldillo
  • 1/4 cups chipotle peppers in adobo sauce, ground or whole, for the caldillo
  • 1 cup beef broth, for the caldillo
  • 2 tablespoons vegetal oil
  • 1 onion, filleted
  • enough salt and pepper
  • enough red onion, filleted, to decorate
  • enough fresh coriander, to decorate
  • enough fresh cheese, crumbled, to decorate
  • enough corn tortilla, To accompany
  • enough sour cream, To accompany


In a saucepan over medium heat, heat the water with the salt and cook the meat with the onion and garlic until it is soft, about 30 minutes. Reserve the broth, remove the meat and crumble.
For the caldillo, blend the onion with the garlic, the tomato, the chipotle chile and the beef broth. Season with salt and pepper.
In a deep pan over medium heat, heat the oil and add the onion. When it is bright, add the caldillo and let it boil, cook for about 15 minutes.
Add the meat, season and cook 10 minutes more.
Serve the tinga and decorate with purple onion, cilantro, fresh cheese and accompany with corn tortillas.
