Typical dish of Mexican cuisine. Made with beef or pork, according to your preference and the basic ingredients like onions and garlic. Elemental to conquer the stomach of your whole family.

Ingredients

4 portions
  • 1/2 kilos beef shank with bone
  • 1/2 kilos beef, remnant
  • 4 cloves garlic
  • 1 onion, big
  • 1 kilo tomato, green
  • sea salt
  • 3 tablespoons oil
  • 1 can chipotle chili, small tin

Preparation

In the pressure cooker, place all the meat with the 2 cloves of garlic, half onion and salt of grain. Close and when you release the steam, leave the fire for about 25 minutes.
While the meat is cooking ... Remove the peel of the tomatoes, wash them and cut them in medium cubes and place them in a small pot with water, cover and let them boil 8 minutes.
File the other half of the onion, finely chop the other 2 cloves of garlic, place them in a pan with a little oil and let them sit flat. (they take a transparent tone).
Remove the tomatoes from the heat and drain them a little.
Once the meat is ready, drain it and in a pan place a splash of oil and quickly fry the meat on both sides. In a saucepan, pass the meat, add the onion and garlic and tomato tomatoes. Incorporate all the ingredients well. Let season 5 minutes.
Add to the mixture a cup of the beef broth where you cooked the meat, add 4 chipotle chilies in pieces and half a cube of knorr Swiss rib flavor and a pinch of salt. Leave seasoning another 8 minutes and go!

PRESENTATION

Serve with rice, beans from the pot and of course, some tortillas!

TIPS

So that the tomatoes remain with the consistency as if you had done it in molcajete, of the amount you cooked, take half, and place them in the blender and liquify it 2 times for 1 second each.
