Stuffed Eggplant

Enjoy this new exquisite dish that I present you with stuffed aubergines!

Ingredients

6 portions
  • 6 eggplants, big
  • 1 kilo ground beef
  • 500 grams bacon
  • 2 onions, big
  • 1 head garlic
  • 3 chili peppers, red
  • 1 paprika, big green
  • 500 grams mushroom
  • 1 kilo pecorino cheese
  • to taste fresh coriander
  • to taste salt
  • to taste butter
  • bechamel sauces
  • to taste thyme
  • to taste tomtato
  • to taste fresh coriander

Preparation

Wash the aubergines thoroughly, and cut through the medium, vertically, put them in water to boil for 5 minutes, remove the seeds leaving the space where the filling will go. And heat the oven to 180 ° C.
For the sauce: In a saucepan put the onion, the tomato, the garlic and the paprika; with a little olive oil, and bake for 10 min. at 180º C. Then liquefy them with a little oil, cilantro, fresh herbs and salt. Then add the bechamel sauce.
For the Mushrooms: Cut them into vertical slices. And in a pan, heat the oil with the butter and put the mushrooms. Leave them to cook almost alone, do not move many which makes it release all its juice, after cooking about 10 minutes add salt and a little thyme.
Filling: In a pan, heat the oil and butter, add the onion cut in feathers, the ground garlic , the bacon, a little sweet pepper, the mushrooms, the ground meat; and let cook perfectly.
Assembly: Fill the aubergines; in a saucepan put a base of the sauce, then stuffed aubergines, bathe again with the sauce, and grate the pecorino cheese on top, gratin for 12 minutes. At 180º C.

PRESENTATION

Put two halves of stuffed aubergines, with a little of the remaining juice in the saucepan and to garnish some sprigs of cilantro or parsley.

TIPS

Béchamel sauce can be bought in powder form, or made by yourself. Do not use thyme in excess; and if you do not have thyme use rosemary.

fabuloso Me gusta la berenjena, las preparo en tiritas en la sarten saltiadas con ajo y luego las pongo  en vinagreta con ajo y oregano aceite de oliva, fabuloso para snachk

bien pero falta corregir cantidad de queso pecorino Estoy segura se equivoco en la cantidad de queso: un kilo??!!!! para 6 berenjenas es un exageración con 150 gramos es suficiente, al igual que la carne con 700 gramos esta bien o un kilo para mas berenjenas, pero se ve buena la receta solo esas correcciones, saludos
