  • 2 tablespoons shallot, finely chopped, for the sauce
  • 1 twig rosemary, for the sauce
  • 1 twig thyme, for the sauce
  • 1 cup sugar, for the sauce
  • 1/4 cups Red wine, for the sauce
  • 1 pinch salt, for the sauce
  • 1 pinch black pepper, for the sauce
  • 4 tablespoons black pepper, whole
  • 1/2 cups rosemary, cool
  • 3 tablespoons thyme, cool
  • 3 tablespoons black pepper, pink, whole
  • 2 tablespoons sea salt
  • 1/4 cups olive oil
  • 1.5 kilos beef fillet

Preparation

Preheat the oven to 180 ° C (356° F)
For the sauce, heat the hibiscus and the water in a pot, add the morita pepper and the onion, cook until the Jamaica softens and the flavor is extracted.
Heat a pot over medium heat with the butter, cook the shallot with rosemary and thyme, strain the previous preparation and pour to cook together with the red wine and sugar, reduce the sauce until it thickens. Season with salt and pepper, reserve.
For the crust, in a bowl place the pepper, rosemary, thyme, pink pepper, salt crushed grain to make a powder, add olive oil and mix.
On a board tie up the fillet, cover with the previous mixture on all sides.
Place the fillet in a baking dish, wrap with aluminum foil, bake for 20 minutes, remove the beef fillet and on a board with a knife cut slices of 3 fingers thick, reserve.
Serve the beef filet bathed with the jamaica sauce and accompany it with salad and mashed potatoes.
