  • 1 twig of thyme for the sauce
  • 1 cup of sugar for the sauce
  • 1/4 of cup of Red wine for the sauce
  • 1 pinch of salt for the sauce
  • 1 pinch of black pepper for the sauce
  • 4 tablespoons of black pepper whole
  • 1/2 cup of rosemary cool
  • 3 tablespoons of thyme cool
  • 3 tablespoons of black pepper pink, whole
  • 2 tablespoons of sea salt
  • 1/4 of cup of olive oil
  • 1.5 kilos of beef fillet


Preheat the oven to 180 ° C (356° F)
For the sauce, heat the hibiscus and the water in a pot, add the morita pepper and the onion, cook until the Jamaica softens and the flavor is extracted.
Heat a pot over medium heat with the butter, cook the shallot with rosemary and thyme, strain the previous preparation and pour to cook together with the red wine and sugar, reduce the sauce until it thickens. Season with salt and pepper, reserve.
