Braided Rice Cake with Picadillo

Dare yourself to prepare this amusing rice cake with picadillo, made with red homemade rice stuffed with picadillo along with carrots and peas. It is ideal as a main course for any occasion since it is super economic and serves many portions.

Ingredients

10 portions
  • 5 tomatoes
  • 1/4 onions
  • 1 clove garlic
  • 6 cups chicken soup
  • 1 pinch salt
  • enough oil
  • 3 cups rice, rinsed, soaked and drained
  • 1 cuaresmeño or jalapeño pepper

  • 1 tablespoon oil
  • 1 kilo ground beef
  • 1/2 onions, finely chopped
  • 1/2 cups pea
  • 1/2 cups carrot, in cubes
  • 1/2 cups fresh coriander, finely chopped to decorate

Preparation

For the rice, liquefy the tomato with the onion, garlic, a cup of chicken broth and season with salt. Reserve.
Heat the oil in a pot over medium heat and fry the rice stirring occasionally, carefully so as not to break it, until golden brown. Remove the excess oil.
With a sieve, add the tomato sauce and cook for a few minutes. Pour in the rest of the broth, let it boil, add the chili and cover. Cook over low heat for about 30 minutes or until the liquid has been consumed and the rice is done.
Remove from heat and let stand with the lid for 10 minutes. It cools completely.
For the picadillo: Blend the tomato, onion, garlic and chicken broth. Strain and reserve.
Heat the oil in a deep frying pan over medium heat, fry the meat with the onion until golden brown. Pour the tomato sauce and simmer over medium heat for 5 minutes, add the vegetables and cook until the liquid is completely consumed. Season and cool.
Cover a mold in the form of a thread with non-stick plastic and add half the rice. Compact very well with the help of a spoon making sure to cover the edges and not leave any empty space.
Form a groove in the middle of the rice and fill with the picadillo. Cover with the rest of the rice and compact very well. Refrigerate for 2 hours.
Unmold the thread and heat before serving and decorate with fresh coriander.

Decorate with fresh coriander.

TIPS

We suggest you cook your rice with plenty of oil, as that will help you stick and compact your cake braids.
