Preparation
In a pan fry the bacon until golden brown. In the same pan seal the meat with a little of the bacon fat until it has lost its red color.
Season with salt and pepper. Take tomatoes, chiles and garlic with 3 cups of water. Blend, strain and pour over the pressure cooker. Add the sealed meat and its juice together with the cubes of chicken broth.
Cover the pot and cook over medium-high heat until the valve rises. Reduce heat to low and cook for 30 minutes.
Serve with beans from the pot, bacon, onion and cilantro.
