Preparation
Sofrito the onion and garlic in a large pot over medium-high heat with a little olive oil.
When the onion has crystallized, add the ranchera sauce, water, rice, mint and salt.
Heat until boiling.
Meanwhile, combine ground beef with tomatoes, 2 tablespoons onion, egg white, mint, salt and pepper.
Form balls and put them in the pot with the boiling liquid.
Reduce the flame, cover and cook over low heat for 30 minutes or until the meat is cooked and the rice is tender.
