Cheese Stuffed Chipotle Meatballs

The dish of meatballs in chipotle sauce are always a popular dish in the homes of Mexican families, they are mainly served at mealtime and are accompanied mostly with rice. There are different preparations of meatballs, but this recipe based on ground beef mixed with pork rind and stuffed with a surprise of asadero cheese cooked in a caldillo or tomato sauce with dried chipotle peppers, will surprise you.

Ingredients

5 portions
  • 100 grams pork rinds, thin, for meatballs
  • 1/2 kilos ground beef, for meatballs
  • 2 eggs, for meatballs
  • 1/3 cups white onion, finely chopped, for meatballs
  • 2 tablespoons garlic, finely chopped, for meatballs
  • 3 tablespoons fresh coriander, finely chopped, for meatballs
  • to taste salt
  • to taste black pepper
  • 1 cup asadero cheese, diced
  • 1 tablespoon vegetal oil, for the caldillo
  • 4 cloves garlic, for the caldillo
  • 1 onion, cut into pieces, for the caldillo
  • 8 tomatoes, cut in quarters, for the caldillo
  • 3 chipotle chilies, dry, seeded, for the caldillo
  • 1 teaspoon allspice, for the caldillo
  • 1 pinch oregano, for the caldillo
  • 1/8 bunches fresh coriander, with everything and root
  • 1/4 cups beef broth, or chicken, for the caldillo
  • 1 pinch salt
  • 1 tablespoon vegetal oil
  • to taste fresh coriander, chopped, to decorate

Preparation

For meatballs, spray the pork rinds with the help of a mortar. In a bowl mix the powdered pork rind with the meat, the egg, the onion, the garlic and the cilantro. Season with salt and pepper.
With your hands, form balls and fill with the asadero cheese cubes, reserve.
For the caldillo, heat a deep skillet with the oil over medium heat, fry the garlic, the onion, the guaje tomato, the chipotle pepper, add the pepper, the oregano, the cilantro and fill with beef broth. Cook for 10 minutes until reduced by half. Remove and cool.
Blend the previous preparation and season.
Heat a pot over medium heat with oil and fry the sauce, add the meatballs and cook until well cooked.
Serve in a bowl, decorate with finely chopped cilantro and enjoy.

PRESENTATION

Serve the meatballs in a deep dish with caldillo and sprinkle with finely chopped cilantro.

TIPS

To give your sauce a richer flavor, sauté the garlic and onion until they have a golden color, the more color you have, the more flavor your sauce will have.
