Chipotle Meatballs Stuffed with Cheese

The dish of meatballs in chipotle sauce is always a popular dish in the homes of Mexican families, they are served mainly at lunchtime and are accompanied mostly with rice. There are different preparations of meatballs, but this recipe based on ground beef mixed with pork rinds and stuffed with a surprise of grilled cheese cooked in a stew or tomato sauce with dried chipotle chillies, will surprise you.

Ingredients

  • 100 grams of pork cracklings thin, for meatballs
  • 1/2 kilo of ground beef for meatballs
  • 2 pieces of egg for meatballs
  • 1/3 of Cup of White onion finely chopped, for meatballs
  • 2 spoonfuls of Garlic finely chopped, for meatballs
  • 3 spoonfuls of coriander finely chopped, for meatballs
  • 1 tablespoon of Salt
  • 1 tablespoon of Pepper
  • 1 Cup of Asadero cheese cut into cubes
  • 1 tablespoon of vegetable oil for the caldillo
  • 4 teeth of Garlic for the caldillo
  • 1 piece of onion cut into pieces, for the caldillo
  • 8 pieces of tomato gourd cut into quarters, for the caldillo
  • 3 pieces of Chipotle pepper dry, without seeds, for the caldillo
  • 1 teaspoonful of fat pepper for the caldillo
  • 1 pinch of oregano for the caldillo
  • 1/8 of bunch of coriander with everything and root
  • 1/4 of Cup of beef broth or chicken, for the caldillo
  • 1 pinch of Salt
  • 1 tablespoon of vegetable oil
  • to taste of coriander chopped, to decorate

    Preparation

    For the meatballs, spray the pork rind with the help of a mortar. In a bowl mix the chicharrón made with meat, egg, onion, garlic and cilantro. Season with salt and pepper.
    With your hands, form balls and stuffed with cubes of grilled cheese, reserve.
    For the stew, heat over a medium heat a deep frying pan with the oil, fry the garlic, the onion, the guaje tomato, the chipotle pepper, add the pepper, the oregano, the coriander and fill with beef broth. Cook for 10 minutes until reduced by half. Remove and cool.
    Blend the previous preparation and season.
    Heat a pot over medium heat with oil and fry the sauce, add the meatballs and cook until well cooked.
    Serve in a deep dish, garnish with finely chopped cilantro and enjoy.

    PRESENTATION

    Serve the meatballs in a bowl with caldillo and sprinkle with finely chopped cilantro.

    TIPS

    To give a richer flavor to your sauce, sauté the garlic and onion until they have a golden color, the more color you have, the more flavor your sauce will have.
