Ingredients

4 servings
  • 2 spoonfuls of vegetable oil
  • 1/2 piece of White onion chopped
  • 5 cloves of garlic chopped
  • 4 pieces of tomato cut in quarters
  • 3 pieces of tomato cut in quaters
  • 8 pieces of pasilla chili pepper deveined and seedless
  • 1 teaspoonful of cumin whole
  • 1 teaspoonful of whole clove
  • 1 teaspoonful of allspices
  • 1 Cup of orange juice
  • 1 Cup of chicken soup
  • enough of Salt
  • 1/4 of Cup of coriander
  • 1/2 kilo of ground beef - beef
  • 1 pinch of black pepper
  • 1/4 of Cup of White rice , cooked
  • 3 pieces of egg cooked, cut into quarters
  • enough of coriander chopped

    Preparation

    Heat the vegetable oil in a deep pan and add the onion, the garlic, add the tomatoes, the tomatoes, the pasilla peppers, the cumin, the clove, the whole black pepper and season with salt. Cook until the vegetables soften.
    Fill with the orange juice, the chicken stock and add the cilantro. Bring to a boil and cook a few more minutes until it is reduced by half. Remove and cool slightly.
    Blend the previous preparation until you get a smooth sauce, strain if necessary and set aside.
    In a bowl mix the meat with salt, pepper and rice. Form meatballs and fill with a small piece of egg.
    Heat a skillet over medium heat with a tablespoon of oil, seal the meatballs until golden brown and fill with the sauce. Let it boil and cook 20 minutes or until the meatballs are done. Serve with chopped coriander.

    PRESENTATION

    Serve with chopped parsley.

    TIPS

    You can mix ground pork with beef so that your meatballs taste better.
