Egg Stuffed Meatballs in Pasilla Sauce

Prepare these delicious Egg Stuffed Meatballs in Pasilla Sauce, a complete meal option for any day of the week. If you want to improve the flavor, you can mix ground beef and pork meat, that will also help to improve the consistency.

Ingredients

4 portions
  • 2 tablespoons vegetal oil
  • 1/2 white onions, chopped
  • 5 cloves garlic, chopped
  • 4 tomatoes, cut in quarters
  • 3 tomatoes, cut in quaters
  • 8 pasilla chili peppers, deveined and seedless
  • 1 teaspoon cumin, whole
  • 1 teaspoon whole clove
  • 1 teaspoon allspices
  • 1 cup orange juice
  • 1 cup chicken soup
  • enough salt
  • 1/4 cups fresh coriander
  • 1/2 kilos ground beef, - beef
  • 1 pinch black pepper
  • 1/4 cups White rice, , cooked
  • 3 eggs, cooked, cut into quarters
  • enough fresh coriander, chopped

Preparation

Heat the vegetable oil in a deep pan and add the onion, the garlic, add the tomatoes, the tomatoes, the pasilla peppers, the cumin, the clove, the whole black pepper and season with salt. Cook until the vegetables soften.
Fill with the orange juice, the chicken stock and add the cilantro. Bring to a boil and cook a few more minutes until it is reduced by half. Remove and cool slightly.
Blend the previous preparation until you get a smooth sauce, strain if necessary and set aside.
In a bowl mix the meat with salt, pepper and rice. Form meatballs and fill with a small piece of egg.
Heat a skillet over medium heat with a tablespoon of oil, seal the meatballs until golden brown and fill with the sauce. Let it boil and cook 20 minutes or until the meatballs are done. Serve with chopped coriander.

PRESENTATION

Serve with chopped parsley.

TIPS

You can mix ground pork with beef so that your meatballs taste better.
