Delicious meatballs of beef with pork rinds. This element gives them a special and delicious flavor. They are also bathed with a tomato and chipotle sauce that makes them much richer. Prepare them at home and enjoy as a family.

Ingredients

8 portions
  • 750 grams ground beef
  • 250 grams pork rind, crushed
  • 2 eggs
  • 2 cloves garlic
  • 1 onion, girl finely chopped
  • 1/2 cups parsley, finely chopped
  • to taste black pepper
  • 10 tomatoes, cooked
  • 4 chipotle chilies, marinated
  • 3 tablespoons oil
  • 2 cups mixed vegetable, (potato, carrot, chayote)

Preparation

Mix the meat, pork rind, garlic, onion, eggs and a little milk. Add the parsley, salt and pepper; It incorporates well and forms pellets of the desired size.
Grind the tomato with the chipotles, strain and season when frying with a little oil.
Once the boil, add the meatballs and cook for 10 minutes.
Add the vegetables, cover and let cook for 15 more minutes.

PRESENTATION

Serve the meatballs on a bed of rice and garnish with a sprig of parsley.

TIPS

Serve with white rice.
