The pacholas are round Milanese made from a mixture of ground beef with spices. It is a traditional dish of my family from Tamaulipas. If you've never tried them, what do you expect?

Ingredients

4 portions
  • 700 ground beef, beef
  • 1 potato, cooked and mashed
  • 1/2 cups onion, finely chopped
  • 2 cloves garlic, chopped
  • 1 egg
  • 3 tablespoons fresh parsley, finely chopped
  • salt, and pepper to taste
  • ground bread, to bread
  • 3 tomatoes, cooked and peeled
  • 1/4 white onions
  • 2 chipotle chilies, marinated
  • 1 bunch peppermint
  • 1 tablespoon vegetal oil
  • 1 slice wholemeal bread, soaked in milk

Preparation

Mix the meat with the potato, the bread soaked in milk, onion, garlic, egg, parsley, salt and pepper and let the mixture rest for 10 minutes. Apart, grind the tomatoes, the onion room, the chipotle peppers and the mint and boil the sauce with a little oil. Add salt at your wish. They make small balls with the meat mixture, they are covered with bread to bread and making use of a little machine to make tortillas, the meatballs are crushed until they are "thin". Pass the pacholas or steaks again for bread to breed and put them to fry in a pan with vegetable oil already hot over medium heat. They are served with green salad or carrot scratch, and tomato sauce with chipotle and mint.

Apart grind the tomatoes, the little onion room, the chipotle peppers and the mint. Cook this sauce with a little oil. Add salt to taste.
Form balls with the meat mixture, cover them with bread to brew and using a little machine to make tortillas or two dishes, crush the meatballs until they are "thin."
Pass pacholas or steaks again for bread crumbs and fry them in a pan with vegetable oil already hot over medium heat.
Serve accompanied by green salad, grated carrot and tomato sauce with chipotle and mint.

TIPS

If you do not have the utensil to make tortillas, use a rolling pin.
