Colombia is a big producer of plantain, and therefore in any table of the Colombian homes, the banana may be missing, prepared in a thousand ways, this time in a combination of meat and hogao that for any Colombian it turns out to be simply a delight to the palate, I add milk cream because it is very soft.

Ingredients

10 servings
  • 1 pound of meat skirt
  • aromatic herbs (1 bay leaf, thyme, oregano) vegetables (garlic, onion, carrot)
  • 4 bananas green with yellow spots
  • 3 tomatoes
  • 1/4 of onion
  • 1 head of garlic
  • 1 tablespoon of oil
  • oils to fry
  • Salt to taste
  • black pepper to taste
  • creams optional

    Preparation

    Place the meat in the pressure cooker with the herbs and vegetables and let cook for an hour or until the meat is tender, let cool and dismeche all the meat reserve.
    In a saucepan place onion, tomatoes and finely chopped garlic with the oil, salt and pepper sauté for 7 minutes and finally add about three tablespoons of the broth of the meat let reduce a little, then add the shredded meat and leave cook a few more minutes, you can add a little milk cream to soften its flavor, but no more is very delicious.
    Apart heat the oil over medium heat and in this place the plantains peeled and cut into portions of 10 centimeters or so, until they are lightly browned. Remove them from the oil on absorbent paper and leave them to rest for a few minutes, then flatten them until a thin arepa or patacón is formed and bring back the oil this time the oil should be very hot and let them fry until golden brown and place them again on the paper absorbent reserve.
    On each patacon place the meatloaf and if you want you can grate cheese on top.

    PRESENTATION

    This delicious patacón accompanied with a drink made with water, brown sugar and lemon and served cold.

    TIPS

    To the patacón before frying it for the second time we can pass it by a mixture of garlic with water and it gives a better flavor to the patacón.
