Beef, stewed with potatoes and guajillo chili. It is a traditional dish of the Sierra de Guerrero, but adapted to the tastes of our family. The combination of guajillo peppermint (mint) gives an exquisite flavor.

Ingredients

10 servings
  • 1 kilo of beef solid
  • 1/2 kilo of potato
  • 100 grams of guajillo chili pepper Roasted and soaked in hot water
  • 1/4 of onion
  • 6 branches of peppermint
  • 1 Cube of beef broth
  • 2 spoonfuls of vegetable oil
  • 2 cloves of garlic
  • Salt to taste

    Preparation

    The meat is cooked for 45 minutes in the express pot.
    Once cooked, the meat is cut into small cubes, reserved.
    The potatoes are cut into cubes and reserved.
    Peppermint and onion are minced
    the chili is ground with the garlic and onion, strained and reserved.
    In a saucepan put the oil, let it heat and add the cubed meat, sauté and add the potatoes in cubes, fry them with the meat and add the mint with the onion, sauté until the Onion is transparent and the ground and ground chili is added, with the Swiss Nork cube.
    When it begins to boil and since these are almost sewn potatoes, add the salt to taste and let it boil until the potatoes are cooked.

    PRESENTATION

    It is served with white rice.

    TIPS

    For a better flavor, you can combine the guajillo chile half of the one that itches and half of the one that does not itch. If it is cooked with the broth where the meat was cooked, it gives a better flavor.
