Preparation
Heat the oven to 180ºC.
Blend the first 4 ingredients until a homogeneous mixture is obtained.
Put the flour in a shallow bowl. Flour the ribs, making sure to cover both sides equally. Shake off the excess flour; cook them in batches one by one in a deep pan, 5 min or until they are browned on their sides turning them after every 3 min of cooking.
Put all the ribs back in the pan, add the sauce; make them boil. Remove the ribs from the fire and cover them.
Bake the ribs 1 1/2 hours or until soft. Remove the fat that floats in the sauce and throw it away. Sprinkle ribs with cilantro and serve with rice.
