Preparation
Pierce the meat to roast and grind it with bacon, ham and carrot. Spread on the outside with crushed garlic, pepper and salt.
Heat some oil in a pressure cooker. Add the crate and fry until golden brown on all sides. Cover with water, cover the pot and cook for 45 minutes.
Meanwhile, prepare the pasilla sauce. Tatema the chilies a little and soak them in hot water for several minutes. Already soft, grind them with garlic, salt and a little of the water in which they were soaked.
Let the meat cool perfectly before slicing it with a sharp knife. Heat the slices in broth from the cooking of the meat and serve with pasilla sauce to taste.
