  • 2 cups carrot, cut into small cubes, for the filling
  • 1 cup pea, bleached for the filling
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch rosemary, finely chopped

Preheat the oven 390 °F (200 ° C)
On a sheet of aluminum foil arrange the sweet potatoes, cover with butter, season with salt, pepper and nutmeg to your liking. Wrap and bake until soft and cooked.
Remove the sweet potatoes from the oven, cool and peel. Blend with the whip cream, the butter and the egg until you obtain a very smooth purée. Adjust seasoning and set aside.
For the filling, heat a skillet over medium heat with the olive oil, fry the onion, garlic and pore until they shine. Add the meat and continue cooking until it changes color, add the tomato puree and deglaze with the red wine, fill with the beef broth, cook until it reduces by half, season with salt and pepper, add the vegetables and a touch of rosemary.
In a baking dish place the filling and cover with the mashed sweet potato. Bake for 10 minutes until the puree browns. Remove from the oven, rest a little before serving so that it does not dislodge. Enjoy

Serve a slice of the pie and accompany with a side salad.

The egg helps to make the mash more consistent and brown, but you may choose to add it or not, it is not essential. You could also substitute meat for lamb meat which is the most common preparation in this dish.
