A very rich and quick recipe to prepare for the beef filet in a creamy morcilla sauce.

Ingredients

6 portions
  • 1 kilo beef steak
  • 100 grams morel, fresh or dried
  • 1/2 canned beef broth
  • 1/4 liters sour cream
  • 1 stick butter, 90 grams
  • 1/2 onions
  • cloves garlic
  • 1/4 cups oil

Preparation

Blend the onion, garlic, and oil. Let marinate the raw steak in this for at least 1 hour.
Preheat an iron for 15 minutes and seal the steak until it is brown on the outside but red on the inside. About 10 minutes per side. If you do not have an iron, you can also seal it in a large pan.
To prepare the sauce put the morels and butter in a pan on low heat for 3 minutes until they are soft.
They are liquefied together with the cream, broth and morels from the frying pan. If you wish you can leave pieces of morels. Salt and pepper are added to taste.
Heat the oven to 160 degrees and heat the steak for 15 minutes.
Heat the sauce separately on the stove until it is hot.
Serve the steak with the sauce and bake for 20 minutes in a refractory covered with aluminum foil.

TIPS

Accompany this dish with a Malbec wine.
