Preparation
Heat the oil in a large skillet over medium-high heat.
Cook the meat until golden brown.
Remove excess fat.
Add the tomato paste, beef broth and water.
Season with garlic, chili powder, cumin, pepper, salt and mountain chiles.
Reduce heat and simmer 8 to 12 hours.
The longer it is cooked, the smoother it will be.
Once the meat is ready, dissolve the corn starch in a small amount of water and add to the pan with the meat and let it cook until the broth thickens, about 5 minutes.
