Preparation
Seal the fillet in half the oil and butter, set aside. Preheat the oven to 200 centigrade.
Add the rest of the oil and butter and season the chopped garlic and the jalapeño pepper. Add the flour and leave a minute to cook. Add the tomato and cumin, leave a minute and add the white wine, leave a few minutes.
Add the beef broth and let the sauce reduce. Add the chopped cilantro.
Slice the steak and place it in a pyrex very close (following the shape of the steak). Bake for 20 minutes.
Place on a platter and bathe with the hot jalapeño sauce.
