  • 2 tablespoons olive oil
  • 2 tablespoons fresh thyme, finely chopped
  • 1 tablespoon whole black pepper, milled at the time
  • sea salt
  • 1 kilo fish steak
  • 2 tablespoons unsalted butter, (for the sauce)
  • 1 tablespoon olive oil, (for the sauce)
  • 1/4 cups garlic, (for the sauce)
  • 1 cup mushroom, sliced ​​(for sauce)
  • 1 bottle dry red wine, (for the sauce)
  • 2 cups beef broth, (for the sauce)
  • 1 tablespoon flour, (for the sauce)
  • 1 teaspoon sugar, (for the sauce)
  • salt, and pepper to taste (for the sauce)


In a bowl mix the olive oil, thyme, salt and pepper and cover the whole filet with the mixture.
To make the sauce begin by heating in a pan half the butter and olive oil.
Add the mushrooms, garlic, sugar and salt and cook for 5 minutes or until everything begins to brown.
Add the thyme, and half the wine. Cook over low heat to reduce the wine for 15 minutes.
Add the remaining wine and reduce again for 15 minutes.
Add the beef stock and continue cooking until reduced to only 1 1/2 cups of sauce.
In another pot heat the remaining butter and add the flour, mix with a balloon whisk until a thick dough is obtained. Add the wine reduction and incorporate with the beater, allow it to cook for 5 minutes.
Heat the oven to 180 degrees centigrade and place the rack in the center of the oven. Bake the steak for 40 minutes or until the desired term. Wait 10 minutes before serving and accompany with the sauce.
