Preparation
Wash the chicken in hot water to relax the muscles of the chicken and this tender, then split half of the lemon, and rub it on the chicken (outside).
For the filling, in a food processor place the stick of butter, pepper, salt, parsley, 1 tablespoon of olive oil, and cilantro.
Carefully place the filling between the skin and the meat of the whole chicken, the rest place it on the outside of the chicken and season with salt and pepper to taste. On a tray (or tray), at the center place one of the beers open and put the chicken on top of it so that the chicken is standing for a full roast inside the oven, then outside the tray (around the chicken) Place the lemon or orange juice and half of the remaining beer and the bay leaves.
Place inside the preheated oven for approximately 1 hour and 15 minutes, after the time, remove and reserve the juice at the bottom of the tray.
Blend the reserved juice and use it as a dressing.
