Calientes birria de carne de res cooked with dried chiles accompanied by salsa, mainly with ancho chili, garlic, onion, clove, vinegar, cumin and sesame seeds. A classic dish of Mexican food that you can prepare at home.

Ingredients

10 servings
  • 4 cups of Water
  • 6 chipotle peppers in adobo sauce
  • 2 ancho chili peppers dry, roasted, deveined and seedless
  • 4 dried guajillo chili peppers roasted, deveined and seedless
  • 8 cloves of garlic Roasted with shell
  • 1/2 onion grilled
  • 1 teaspoonful of cumin roast
  • 20 black pepper grilled
  • 4 whole cloves roast
  • 1 teaspoonful of oregano
  • 1/2 Cup of White vinegar
  • 1 kilo of beef with bone, washed and cut in medium cubes
  • 2 cups of Pure Natural Tomato Puree®
  • 2 spoonfuls of sea salt
  • 1/2 Cup of White onion finely chopped
  • 1/2 Cup of coriander finely chopped
  • 20 Corn tortillas

Preparation

Preheat the oven to 180 ° C.
Blend the chipotles, broad chiles, guajillo chili, garlic without peel, white onion, cumin, pepper, clove, oregano and white vinegar. Reservation.
In a baking dish add the beef, the previous preparation and let it marinate for 5 hours.
Once marinated, cover with aluminum foil and bake for 4 hours until the meat is soft.
Once the meat is well cooked, reserve the cooking juices and add them to a pot, add the Del Fuerte® Natural Tomato Puree, cook for 10 minutes and season the preparation with the grain salt.
Serve, serve with tortillas, lemon, onion and cilantro.

PRESENTATION

Serve in a clay dish with lemons, onions and cilantro to accompany. You can not miss blue or white corn tortillas.

TIPS

The birria can be hot or dry depending on where it is prepared, the original recipe is goat meat but you can use another type of protein such as sheep, lamb, chicken, pork or veal. Traditionally it is a festive dish to celebrate weddings or baptisms birthdays.

Yo le agreguė 3 jitomates guajillos en lugar del purė de tomate. Y le añadī 5 hojas de aguacate. Ademås la cocī en olla express. Y me quedó deliciosa!!
