Preparation
Blend the cloves of garlic, salt, pepper and 1/2 cup of water and empty into a bowl and marinate the steaks in this mixture.
Boil the green tomatillo or miltomate and add the chiles moritas until they are cooked. Blend these with garlic cloves.
Sancoche in a saucepan the onion sliced into slices and the potatoes with their peel and divided into cubes of 2-3 cm. for 3-4 minutes avoiding burning the onion. Remove them from heat and set aside.
Drain the steaks and sancochelos in the same oil. Reserve the water where they marinated.
Once parboiled add the liquefied sauce and let a boil, add the potatoes and onion, add the remaining water (where marinated the steaks and the missing cup of water), salt to taste. Cover and cook until the potato is cooked.
