Ingredients

4 portions
  • 1 cup amaranth, for the breading
  • 1 cup ground bread, for the breading
  • 4 guajillo chiles, roasts, for breading
  • 2 ancho chiles, roasts, for breading
  • 1/4 cups árbol chile, roasts, for breading
  • salt, for the breading
  • 1 cup flour
  • 300 grams chicken breast, in medium strips
  • spray oil
  • dip, creamy chipotle
  • parsley, finely chopped, to decorate
  • salad, citrus, for garnish

Preparation

With the help of the Kitchen Central®, grind the amaranth for 5 minutes until it forms a flour. Place in a bowl and reserve.
Place the chiles in the Kitchen Central® and grind on medium speed for 10 minutes until they are completely powdered. Place in the bowl where the ground amaranth is.
Add the panko in the bowl of amaranth and chilies, and mix until all the ingredients are integrated.
Place the flour on an extended plate; in another, the previous mixture of panko, amaranth and chilies, and in a bowl the beaten eggs.
Pass the chicken strips through the flour, completely covering the chicken, then go through the egg and finally, through the breaded chili peppers, completely cover the chicken and squash so that it sticks very well.
Place on the rack of the Cusinart® Air Fryer and spray with the cooking spray and place in the Cusinart® Air Fryer and put on nuggets mode for 5 minutes.
Serve on an extended plate, garnish with sliced jalapeno peppers and chopped parsley. Accompany with creamy chipotle sauce.

PRESENTATION

Serve on a round plate and accompany with salad.

TIPS

Make sure that the chicken is thin so that it cooks quickly and that the breading does not burn from the chili.
