Preparation
Preheat the oven to 200 degrees Celsius.
Prepare a large refractory to roast with aluminum foil and put a roaster inside the refractory.
Take the ham and remove part of the grease cover leaving a very thin cover. Make diamond-shaped cuts on the fat cover of the ham without cutting the meat.
Place the ham on the roaster with the fat facing up and roast for 1 hour.
In a deep bowl combine the jam and mustard.
Remove the ham from the oven and paint with the jam sauce and return to the oven. Repeat this every 15 minutes until the jam and the ham are golden and shiny (like 1 additional hour).
Remove ham from oven and keep warm until serving.
