For this recipe of enfrijoladas you must make sure that the bean sauce is not too watery so that it does not soak the tortilla and when slicing it, it doesn't fall apart.

Ingredients

4 servings
  • 3 pieces of tomato
  • 1/4 of piece of onion
  • 1 clove of garlic
  • 1/4 of Cup of chicken soup
  • enough of salt and pepper
  • 1 1/4 cups of FUD® turkey sausage 310 g jar
  • 1/2 Cup of onion finely chopped
  • 2 cups of chicken cooked and shredded
  • 1 Cup of whole black bean cooked and with its own juice
  • 1/4 of Cup of onion grilled
  • 1 Cup of garlic roasted
  • 1/2 Cup of cream cheese
  • 1/2 Cup of chicken soup
  • 1 branch of epazote
  • 1 teaspoonful of ground cumin
  • 12 pieces of Corn tortillas
  • enough of vegetable oil
  • enough of sour cream to serve with
  • enough of Panela Fud® cheese crumbled, to serve with
  • enough of avocado to serve with

    Preparation

    For the soup mix the tomato with onion, garlic, chicken broth, salt and pepper.
    In a pan over medium heat, fry the FUD® turkey sausage until golden brown. Reserve ¼ cup of the chorizo to decorate. There, add the onion and fry a little, add the chicken and the tomato sauce. Bring it to a boil and cook about 10 minutes or until the liquid is reduced. Season to taste and set aside.
    For the bean sauce, blend the beans with the juice, the onion, the garlic, the cream cheese, the chicken broth, the epazote and the cumin. Cook the sauce in a pot over medium heat for 10 minutes or until thicken, remove and reserve hot.
    Fry the corn tortillas in a pan over medium heat with a little vegetable oil, for 30 seconds, just to soften them and drain on absorbent paper.
    Fill the tortillas with the chicken and close in the form of quesadilla. Arrange 3 pieces on each plate and bathe with the bean sauce. Serve with the chorizo you reserved, cream, FUD® panela cheese and avocado.

    PRESENTATION

    Serve with chorizo, cream, cheese and avocado.

    TIPS

    If you want a lighter version, you can heat the tortillas in the comal or in a pan instead of frying them.
