Preparation
To make the balls, crush the serrano ham, garlic, parsley and mix with the previously chopped chicken.
Add the egg, the bread crumbs and mix everything well. Form the balls with the previous mixture and fry in hot oil.
For the sauce, sauté the garlic and onion until golden brown.
Add the cut potato into small pieces.
Add the mustard, pepper and chicken stock. Lower the heat and cook for 15 minutes until the broth has been reduced by half.
