Preparation
Season the chicken with salt and pepper and soak the pieces in the flour.
In a large pot heat the oil over medium-high heat. Add the chicken pieces and sauté until golden brown (about 5 minutes per side). Pass the chicken to a plate and reserve.
Add the pepper, onion and garlic to the same pan and sauté over medium heat until the onion is golden, about 5 minutes. Season with salt and pepper.
Add the wine and simmer until it is reduced by half, about 3 minutes. Add the tomatoes with their juice, the broth, the capers, the olives and the oregano.
Return the chicken to the pan. Continue to simmer the sauce until the chicken is cooked, about 30 minutes for the chicken breasts, and 20 minutes for the thighs.
