Ingredients

4 servings
  • 6 tomatoes
  • 5 guajillo chili peppers
  • 5 chile de árbol peppers
  • 1 Cup of chipotle peppers in adobo sauce
  • 1 Cup of sour cream
  • 1 clove of garlic
  • 2 spoonfuls of vegetable oil
  • 4 chicken thighs
  • 4 chicken legs
  • 1 Cup of cambray potato Cooked and cut in halves
  • enough of salt and pepper
  • enough of White rice to accompany
  • enough of parsley to garnish

Preparation

In a pot with hot water, cook the tomatoes, the guajillo and the árbol peppers for 20 minutes, drain and set aside.
Blend the above with the chipotle in adobo, cream and garlic.
In a pan over medium heat heat the oil and seal the chicken pieces. When they are golden, pour the sauce, season with salt and pepper, bring to a boil and cook over low heat for 25 minutes or until the chicken is done.
Add the potatoes, cook 5 minutes more and serve hot, garnish with parsley and serve with rice and tortillas.

PRESENTATION

Serve with white rice, tortillas and black beans.
