Preparation
Mix cilantro, lemon juice, and garlic in the blender. Add 1/4 cup water.
In a deep bowl, mix the chicken, peppers and onion. Add the marinade. Cover and refrigerate for at least 30 minutes (if you like very marinated chicken refrigerate the night before). Season with salt and pepper.
Heat a large skillet over medium heat and add the olive oil and cumin, cook for 30 seconds. Add the chicken, peppers and onion and cook for 12-15 minutes or until chicken is well cooked.
Serve with hot tortillas accompanied by cream and green sauce to taste.
