Delicious barbecue chicken in green papaloapan style sauce, a very rich and nutritious chicken. I recommend doing it and accompany it with white rice.

Ingredients

10 portions
  • 20 chickens
  • 1 1/2 kilos green tomato
  • 400 grams serrano pepper, green
  • 1 package aluminum foil
  • 30 leaves Hoja Santa, or wonderful
  • 200 grams lard
  • 1 head garlic
  • 1 to taste salt, to taste
  • 4 plantain
  • 1 a bit vinegar

Preparation

Wash the chicken. Grind 3 cloves of garlic and a little vinegar, season the chicken with salt to taste, bathe with the vinegar and let it rest for 8 minutes.
A part grinds, green tomato, 10 leaves of acullo, chili, garlic. Leave 10 leaves of acullo to make tamalitos.
Put aluminum foil, cut the banana in slices, long and place them on the paper, put 2 pieces of chicken, bathe with the sauce, put little butter, and wrap with the leaf of an acullo, as if it were a tamalito.
Cook in a bain-marie for an hour or until ready.

PRESENTATION

Serve in a platter with everything and aluminum foil.

TIPS

You can add cilantro to the sauce, along with the acullo.
