Chicken in Green Sauce with Epazote

Classic chicken in green tomato sauce with epazote, cilantro, chile serrano and the delicate touch of coriander seeds is ideal to accompany with a red rice and vegetables. You can not miss this dish served in a fresh made tortilla. Amazing.

Ingredients

6 portions
  • 10 tomatoes, cut in quarters
  • 2 serrano peppers
  • 3 cloves garlic
  • 1/2 onions, chopped
  • 1 branch fresh coriander
  • 1 branch epazote
  • 2 tablespoons oil
  • 1/3 onions
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 kilo chicken, (thigh and leg) cooked

Preparation

Heat over medium heat, add the tomatoes and chilies until they change color.
In a blender add the tomatoes, chilies, garlic, onion, cilantro, epazote and liquefy for 1 min.
Heat the oil, add the onion, sauté until it changes color, pour the sauce, season with salt and pepper, cook for 10 min.
Add the chicken and cooking pieces for 5 more minutes.
Accompany with rice.

PRESENTATION

Serve one leg and half of the breast accompanied by a little red rice and serve with fresh tortillas. Delicious.

TIPS

To prevent the sauce from being acidic, cook it for a long period until it boils.
