A good variation on the famous recipe of Almendrado Chicken. In this it is prepared with peanuts, tomato and a touch of sherry.

Ingredients

6 portions
  • 1/4 cups oil
  • 1 chicken, cut into pieces
  • 2 cups chicken soup
  • 1 onion, cut into pieces
  • 1 clove garlic, chopped
  • 1 branch cinnamon, 2.5 cms
  • 2 grains whole black pepper
  • 3 tomatoes, peeled, divided into quarters and without seeds
  • 1/2 cups peanut, peeled
  • 1/2 cups dry sherry

Preparation

Heat the oil in a pan and brown the chicken. Remove the chicken and put it in a large saucepan. Add the chicken broth and cook for 30 minutes until tender. Cole and reserve the broth.
In the rest of the oil where the chicken was cooked, sauté the onion, garlic, cinnamon and peppercorns. Remove them and place them in a food processor together with the tomatoes, the peanut and 1 and 1/2 cup of chicken broth.
Process until the sauce has a good consistency. Add the sherry and put everything inside the pan along with the chicken.
Let simmer with a lid until the sauce thickens a little.
Season with salt and pepper and serve.
