We bring to you this recipe of Chicken in Pineapple Sauce with Avocado with a spicy and fresh touch at the same time, that you can accompany with a delicious white rice.

For this easy recipe you can use natural pineapple or pineapple in syrup; You can also substitute chicken for fish, if you prefer something lighter.

Ingredients

2 servings
  • 1 Cup of pineapple
  • 1 piece of tomato roasted
  • 1 piece of chipotle chile pepper
  • 1/8 of piece of onion roasted
  • 1/4 of Cup of coriander
  • 2 pieces of habanero pepper roasted
  • 1 piece of garlic
  • 1/4 of Cup of pineapple syrup
  • 1/4 of Cup of pineapple juice
  • 1/2 tablespoon of cumin
  • 1 tablespoon of Salt
  • 1/2 tablespoon of black pepper
  • enough of vegetable oil
  • 2 pieces of chicken breast
  • 1/2 Cup of pineapple in cubes, for the pico de gallo
  • 1 piece of avocado in cubes, for the pico de gallo
  • 1/2 Cup of coriander finely chopped, for the pico de gallo
  • 1/4 of Cup of red onion finely chopped, for the pico de gallo
  • 2 pieces of serrano pepper finely chopped, for the pico de gallo
  • 2 spoonfuls of lemon juice for the pico de gallo
  • enough of White rice to accompany

    Preparation

    Blend the pineapple with the tomato, chipotle, onion, cilantro, habanero pepper, garlic, pineapple syrup, pineapple juice, cumin, salt and pepper until you get a homogeneous sauce.
    In a frying pan, seal the chicken on both sides with the oil and cook over medium heat, add the sauce and cook until the chicken is cooked.
    For the pico de gallo, in a small bowl mix the pineapple with the avocado, the cilantro, the purple onion, the chile serrano, the lemon juice, the salt, the pepper.
    On a plate spread a thin layer base of sauce, top with the chicken and decorate with the pico de gallo pineapple. Accompany with rice and enjoy.
