Ingredients

5 portions
  • 1 clove garlic, for the sauce
  • 1 cup whipping cream, for the sauce
  • 1 1/2 cups milk, for the sauce
  • 1/2 cups apricot jam, for the sauce
  • 2 tablespoons chipotle peppers in adobo sauce, for the sauce
  • 1 teaspoon cornstarch, for the sauce
  • 3 tablespoons butter, in cubes, for the sauce
  • salt, for the sauce
  • black pepper, for the sauce
  • 1/2 cups goat cheese, for the filling
  • 1 cup Granut Mix® Mix Natural
  • 1 tablespoon garlic powder, for the filling
  • 1 tablespoon paprika, for the filling
  • 1 tablespoon chives, finely chopped, for the filling
  • salt, for the filling
  • black pepper, for the filling
  • 5 chicken breasts, in large and thick milanesas
  • olive oil
  • salad, green, to accompany

Preparation

For the sauce, blend the garlic together with whipping cream, milk, apricot jam, chipotle chili and cornstarch until completely integrated.
In a pot with melted butter, pour the previous mixture, season with salt and pepper, and cook for 6 minutes over medium low heat. Reserve hot.
For the filling, in a bowl mix the goat cheese with the Granut Mix® Mix Natural, the garlic powder, the paprika, the chives, the salt and the pepper.
Preheat the oven to 200 ° C.
Place a chicken milanese on a flat surface, add the filling in the center and roll, remember to do it carefully so as not to break the piece of chicken. Place the chicken piece on a sheet of aluminum foil, pour in a little olive oil and roll the sheet again by squeezing the formed chicken cylinder. Repeat until the breasts are finished and place everything on a tray.
Bake the chicken for 20 minutes at 200 ° C. Once cooked, cut the chicken pieces into slices
Serve a tablespoon of apricot sauce on an individual plate, place the medallion chicken breasts on top and garnish with chives. Accompany with green salad.

PRESENTATION

Serve hot and accompanied by a green salad.

TIPS

If you do not want to bake the breasts, just secure the filling well with the help of toothpicks and cook in a pan over medium low heat, covering the breasts so they do not dry out.
