Ingredients

6 portions
  • 4 ounces Philadelphia® cream cheese, softened
  • 10 ounces spinach, chopped
  • 1 1/4 cups mozzarella cheese, skim
  • 6 tablespoons parmesan cheese, grated
  • 6 chicken breasts, boned
  • 1 egg
  • 10 Ritz cookies, crushed
  • 1 1/2 cups tomato sauce, hot

Preparation

HEAT oven to 375ªF. MIX well the cream cheese, spinach, 1 cup of mozzarella and 3 tbsp. of Parmesan; Spread the mixture over the chicken breasts. Beginning with a short end of each breast, roll them well. Affirm them with chopsticks, if you wish.
BEAT the egg on a flat plate. Mix remaining Parmesan and crushed cookies in another flat dish. Dip the chicken in the egg and then top it with the crumb mixture. Place it, with the joints down, in a 13x9-inch baking dish sprayed with cooking spray.
BAKE the chicken for 30 min. or until cooked (165ºF). Remove it and get rid of the chopsticks, if you used them. Serve the rolls bathed with spaghetti sauce and sprinkle with the rest of the mozzarella.

TIPS

Add chopped fresh basil and / or sliced ​​black olives to the spaghetti sauce before heating.
