Chicken Salpicón Toasts

The salpicón is a delicious Mexican salad that is usually prepared with shredded beef. Now we leave this rich version with chicken mixed with onion, tomato, cilantro, lettuce and a rich vinaigrette. Serve on toast and garnish with avocado.

Ingredients

10 servings
  • 3 liters of Water to cook chicken breast
  • 1 piece of chicken breast with skin and bone
  • 1/4 of bunch of coriander with everything and root
  • 2 cloves of garlic
  • 1/2 piece of White onion
  • 1 tablespoon of Salt
  • 1/2 Cup of red onion cut into strips for spattering
  • 1/2 Cup of tomato cut into strips, without seeds for spattering
  • 1/4 of Cup of coriander leaf for the salpicón
  • 1 Cup of Romaine lettuce cut into strips, for spattering
  • 1/2 Cup of Panela cheese cut into small cubes, for spattering
  • 1/4 of Cup of radish cut in half moons, for the spatter
  • 5 pieces of Chili pepper pickled, for the salpicón
  • 1/4 of Cup of Apple vinager for the salpicón
  • 2 spoonfuls of oregano for the salpicón
  • 3 spoonfuls of lemon juice for the salpicón
  • 4 spoonfuls of olive oil for the salpicón
  • 1 pinch of Salt for the salpicón
  • to taste of fried or toasted corn tortilla
  • 1 piece of avocado cut into a fan
  • to taste of sauce smashed
  • to taste of cambray onion in hoops
  • to taste of oregano to decorate

    Preparation

    Heat the water over medium heat in a pot, cook the breast with the cilantro, garlic, onion and salt to your liking. Remove the breast when cooked, cool and strain.
    In a bowl mix the ingredients of the salpicón with the chicken, season to your liking and reserve.
    Serve the salpicón on corn toast, with cambray rings, avocado and sprinkle with oregano. Also serve it with sautéed sauce, share and enjoy.

    PRESENTATION

    Decorate the toast with an avocado fan, onion rings, chamomile and fresh oregano.

    TIPS

    You can change the protein for your preference, be it chicken or beef.
