Milanesas are an everyday dish in Mexican homes and most likely in some other parts of the world. On this occasion, we present you a Milanese that is accompanied with a very easy and quick mole to prepare, it will give it a different twist!

Ingredients

4 portions
  • oil, for the mole
  • 1/4 onions, for the mole
  • 1 clove garlic, for the mole
  • 4 tomatoes, for the mole
  • 1 apple, for the mole
  • 3 ancho chiles, for the mole
  • 4 pasilla chiles, for the mole
  • 3 morita chiles, for the mole
  • 2 white breads, for the mole
  • 1 clove, for the mole
  • 3 pepper, for the mole
  • 1/4 teaspoons cumin, for the mole
  • 1/2 teaspoons coriander seed, for the mole
  • 1/2 teaspoons oregano, for the mole
  • 2 tablespoons raw sugar, for the mole
  • 1 cup chicken broth, for the mole
  • 1 cup pumpkin seed, for the mole
  • 1 cup peanut, for the mole
  • flour, for the Milanese
  • 2 eggs, for the Milanese
  • corn flakes, ground, for the Milanese
  • 4 chicken breasts, for the Milanese
  • oil, for the Milanese
  • praline sesame, to decorate
  • chives, to decorate

Preparation

For the mole, heat a pot over medium heat and fry the onion, garlic and apple; Add all the chilies and the white bread, add the cloves, the pepper, the coriander seed, the oregano, the muscovado sugar and the chicken broth, cook for 5 min until the ingredients are soft.
Blend the ingredients that you previously fried, add the seed, the peanut and add more broth if necessary.
Again, heat the pot and add a little oil, then the mole that you blended and add salt, cook for 10 min until all the flavors are integrated.
For the Milanese, pass the already seasoned chicken Milanese with flour, egg and ground corn flakes.
Fry the milanesas in plenty of oil at medium temperature. Remove excess fat with absorbent paper towels.
Serve the milanesas with the mole, decorate with caramelised sesame and chives.

TIPS

You can substitute the corn flakes for breadcrumbs, amaranth, or some other type of flour.
