Preparation
Combine in a deep bowl the sherry, the sugar, the 1/2 cup of soy sauce, the oil and the chopped chives. Add the chicken and let it marinate for 15 minutes.
Heat a grill at medium heat and prepare skewers with wooden sticks, placing 3-4 strips per toothpick.
Cook each brochette approx. 4-5 minutes on each side until chicken is well cooked.
Prepare the peanut sauce combining peanut butter, chicken broth, soy sauce, brown sugar, ginger, lemon juice, chopped garlic and red chili in a blender and blend for 2 minutes.
Serve the skewers accompanied by the peanut sauce.
