Ingredients

4 portions

  • 800 grams chicken breast, whole, with bone and without the skin

  • enough salt
  • 1 tablespoon vegetal oil
  • 1/2 onions
  • 2 cloves garlic
  • 8 green tomatoes
  • 4 serrano peppers
  • 1 tablespoon cumin
  • 3 allspices
  • 1/2 cups fresh coriander
  • 1 cup chicken soup
  • 1 tablespoon vegetal oil
  • 1 onion, filleted
  • enough avocado, in a fan, to decorate
  • enough parsley, to decorate

Preparation

In a pot, with water cook the chicken with the onion, garlic, cilantro and salt until cooked. Remove and reserve the broth.
On a table shred the chicken. Reserve.
In a deep pan, heat the oil and cook the onion, garlic, tomatoes, serrano pepper, cumin, pepper, cilantro until they change color. Fill with the chicken broth and cook until the vegetables are dissolved and the liquid is reduced. Cool slightly
Blend the previous preparation until a sauce is obtained.
In a saucepan heat the oil and cook the sliced onion until bright, add the chicken and cook for 5 minutes. Pour the sauce. Let it boil and cook for 10 more minutes. Season to your liking
Serve the tinga and decorate with avocado and parsley leaves. Accompany with beans and corn tortillas.

En casa los tomates son hervidos menos el cilantro, ya que si se muele fresco con los tomates suelta todo su sabor. y no mezclen el perejil en ese caso decorar con más hojas de cilantro.
