Chicken to the Tocatlán (10o% Mexican)

Delicious steamed chicken wrapped in aluminum foil or mixiote accompanied by vegetables and Oaxacan cheese ideal for daily meal or family reunion.

Ingredients

8 portions
  • 8 Chicken pieces, thigh and leg
  • 1/2 kilos Oaxaca cheese
  • 1/4 kilos pickled jalapeño pepper
  • 10 nopales, cut into squares
  • 2 onions, cut into slices
  • 8 leaves epazote, cool
  • 15 leaves chard, chopped (when boiled few are made)
  • pinches garlic
  • 8 leaves aluminum foil, or mixiote
  • 10 green tomatoes, diced

Preparation

Wash the chicken well, drain and dry.
Season the chicken with garlic, salt and pepper (to taste).
Put a chard bed on the sheet of aluminum foil or mixiote, then the chicken, a handful of cheese, chard, nopales, onions, green tomato and rajas. Add the epazote leaf. Do the same with all the chicken forming the mixiotes.
Wrap and put in a steamer at medium heat for 40 min (the cooking time of the chicken depends on its size). Check it after 40 minutes and if it is not cooked, leave them a few more minutes and serve.
Serve with some rice or pasta.

TIPS

In addition to delicious this is a very nutritious dish because everything is steamed. It is ideal for someone on a diet.
