Preparation
Prepare the marinade. Mix chopped cilantro, lemon juice, olive oil, and chicken breasts in a large bowl. Let stand for 3 minutes.
Remove the chicken from the marinade and sprinkle with salt.
Heat a grill pan over medium-high heat and add PAM.
Add the chicken to the pan and cook for 6 minutes on each side until ready.
Prepare the sauce. Mix chopped tomato in cubes with lemon juice, cubed avocado, purple onion, salt and pepper.
Serves as sauce on chicken.
