Ingredients

3 portions
  • 2 tablespoons fresh coriander, chopped
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons olive oil
  • 4 chicken breasts, without skin, cut in half
  • 1/4 teaspoons salt
  • 1 cup tomtato, chopped (for sauce)
  • 2 tablespoons red onion, minced (for sauce)
  • 2 teaspoons lemon juice, for the sauce
  • 1/4 teaspoons salt, (for the sauce)
  • 1 avocado, in cubes for sauce
  • 1 1/8 teaspoons black pepper, for the sauce
  • cooking spray

Preparation

Prepare the marinade. Mix chopped cilantro, lemon juice, olive oil, and chicken breasts in a large bowl. Let stand for 3 minutes.
Remove the chicken from the marinade and sprinkle with salt.
Heat a grill pan over medium-high heat and add PAM.
Add the chicken to the pan and cook for 6 minutes on each side until ready.
Prepare the sauce. Mix chopped tomato in cubes with lemon juice, cubed avocado, purple onion, salt and pepper.
Serves as sauce on chicken.

TIPS

It can be served with Mexican rice.
