You will like this classic chicken and mushroom recipe a lot. It has mushrooms sauteed with butter and flamed with white wine and a creamy sauce to accompany, which is perfectly smooth with the whole milk Santa Clara.

Ingredients

4 servings
  • 4 spoonfuls of Butter (for the sauce)
  • 1/4 of piece of onion finely chopped (for the sauce)
  • 1 clove of garlic finely chopped (for the sauce)
  • 2 spoonfuls of flour (for the sauce)
  • 4 cups of Whole Milk Santa Clara® cold (for the sauce)
  • 1 Cup of white mushroom (for the sauce)
  • 1/2 teaspoonful of Salt (for the sauce)
  • 1/4 of teaspoonful of black pepper (for the sauce)
  • 1 pinch of nutmeg (for the sauce)
  • 1 tablespoon of Butter (for mushrooms)
  • 1/2 Cup of white mushroom chopped into thick slices
  • 3 spoonfuls of White wine (for mushrooms)
  • 1 pinch of Salt (for mushrooms)
  • 4 pieces of chicken breasts skinless and boneless
  • 4 pinches of Salt (for breasts)
  • 2 pinches of black pepper (for breasts)
  • 4 teaspoons of oil

    Preparation

    For the sauce, heat the butter over low heat in a pot and sauté the onion and garlic, add the mushrooms and cook for two minutes. Add the flour and cook until it becomes colored. Add the whole Santa Clara milk and cook over low heat while moving 20 minutes or until it thickens. Season and cool slightly, blend until a smooth sauce is left. Reservation.
    For mushrooms, in a pan melt the butter over low heat and sauté the mushrooms for 4 minutes. Add the white wine at once and let the liquid reduce almost completely. Season and reserve.
    Season the breasts on both sides and fry in a pan over medium heat with oil until cooked and browned.
    Serve the breasts with the sauce and decorate with the mushrooms.

    PRESENTATION

    Place the sauteed breasts with the sauce and decorate with the mushrooms.
