Ingredients

4 portions
  • 1 Cube chicken soup
  • 3/4 cups Water, hot
  • 1 cup long grain rice, (jasmine or Thai rice)
  • 600 grams chicken thigh, without bone and cut into cubes
  • 1 ginger, peeled and cut in julienne
  • 3 cups baby spinach
  • 1 cup unsweetened coconut milk
  • cups Kosher salt, to taste

Preparation

In a bowl dissolve the bucket of chicken broth in the hot water.
In a rice cooker, add the rice, chicken and ginger.
Arrange spinach to the top. Pour the coconut milk and hot water with the bucket of chicken broth dissolved.
Season with salt.
Start cooking and wait approximately 40 minutes. Wait 5 minutes before opening.
With a fork separate the preparation and serve on individual plates.
